Rewari Sohan Halwa Recipe

Ingredients

Sugar (1/4 kg)

All-purpose flour (1/4 kg)

Oil/ ghee (1/4 kg)

Milk (1/2 cup)

Water (1 liter)

Saffron (1 tbs)

Cardamom powder (25 gram)

Pistachio (3-4 tbs for garnishing)

Almonds (4-5 tbs for garnishing)

Walnuts (3-4 tbs for garnishing)

Grape powder (1 tbs)

Recipe

Pass the all-purpose flour through a sieve and make sure there is no hard core. In a pan, pour in the half of the water and add  half of the sugar and place is on stove on medium-low flame, gently mix it till all the sugar is dissolved in water, boil this mixture for almost 5 minutes.

In the sugar syrup add the milk and stir it again, let it boil for 5 minutes. After it is boiled it will be a little thick, pass it through a sieve or thin cloth. Now you can add remaining water and sugar into the mixture.

In almost two table spoon of warm water dissolve the saffron and add it to the milk, sugar and water mixture.

Add all-purpose flour in water and add it to the mixture. It will give sticky and thick texture to the mixture. At this stage add a little oil, and keep stirring. This will prevent the mixture from sticking at the bottom of the pan.

Every time it becomes thicker, add a little more oil. Turn off the flame when you are satisfied with the texture.

Now grab and tray and grease it by using oil, spread the halwa and gently press it to evenly spread it on the tray.

Garnish with almonds, pistachio and walnuts, once it is at the room temperature cut it into pieces and serve it.
