Sohan Halwa by Khwaja Sweets Recipe
Sugar (1 kg )
Milk (2 cup)
All-purpose flour (1 kg)
Almonds (1/4 kg)
Walnuts (1/4 kg)
Cashews (1/4 kg)
Pistachios (1/4 kg)
Oil or ghee (1/2 kg)
Coconut powder (2 table spoon)
Water (2 liters)
Saffron (1 table spoon)
In a pan add water and sugar, mix it well and put it on medium flame. The sugar will dissolve on heating and it will be caramelized. Let it boil, once it is boiled wait for five minutes and turn the flame from medium to medium low.
Now, add milk to this syrup and keep stirring. Once it is boiled, it will be a little thick.
Now add all-purpose flour to this mixture and keep stirring. Flour will make the consistency a little thick, we are aiming for a thick creamy paste. Keep stirring until it is thick and creamy.
Once it is a little thick dissolve saffron in three table spoon of warm water, add this into the mixture.
The mixture will be sticky and thick, now is the time to add ghee or oil. This will help to prevent the mixture from sticking.
Keep stirring, you will see oil is rising on the top and on the sides of the pan.
Now add almonds, walnuts, cashews, pistachios to the mixture. Dish it out into a pan or tray, decorate it according to taste.
As it cools down, slice it up into small cubes and on top sprinkle some crushed coconut.
