Haji Rabri Recipe
Full fat Milk or butter milk (1 ½ litter)
Sugar ( 3-4 table spoon recommended but you can use according to your taste)
Cardamom powder (1-2 tbs)
Saffron (1-2 tbs)
Almonds (3-4 tbs for garnishing)
Pistachios (3-4 tbs for garnishing)
Rose water (2-3 drops for aroma)
Place a pan on medium low heat and pour milk into the pan. Let it boil on low flame but keep stirring, use wooden spoon for stirring, this will prevent the milk from sticking at the bottom. Add cardamom powder, saffron and rose water to enhance the flavor.
Keep stirring after every 5 minutes, once you can see thick cream gathering over the top. Mix it slowly and let it boil. This will become thick and heavy just like cream. All the water will evaporate leaving moist and thick cream behind.
Now, add sugar and gently mix it. Let it sit and cool to the room temperature.
Pour this mixture into serving bowl and garnish it with almonds and pistachio. Delicious Rabri is ready to be served, you can serve it at room temperature but it tastes best when served chilled.
