kcalSohan Halwa is a symphony of flavors and textures. Sweetened with sugar, the halwa is made with all-purpose flour, oil or ghee, and grape powder. Milk and water add depth and richness, while saffron milk lends a vibrant hue. Cardamom powder infuses the halwa with a warm and aromatic spice. Nuts, such as almonds, pistachios, and walnuts, provide a delightful crunch. The result is a dessert that is both decadent and irresistible.
Ingredients
Sugar (1/2 kg)
All-purpose flour (1/2 kg)
Oil/ ghee (1/2 kg)
Grape powder (2 tbsp.)
Milk (1 cup)
Water (2 liters)
Saffron milk (3 tbsp.)
Cardamom powder (50 grams)
Pistachio (3-4 tbsp. for garnishing)
Almonds (4-5 tbsp. for garnishing)
Walnuts (3-4 tbsp. for garnishing)
Grape powder (2 tbsp.)
Directions
- Sieve the Flour:
- Pass the flour through a sieve to ensure it’s lump-free.
- Prepare Syrup:
- In a pan, pour 1 cup of water and add sugar. Place it on a medium-low flame. Stir continuously until the sugar is completely dissolved in the water. When the syrup boils, add milk to it. Reduce the flame slightly and let it continue boiling.
- Boil the Mixture:
- Once the mixture has boiled, let it cook for 5 minutes. It will thicken, and you may notice a bit of scum on top. The goal is to remove this. Pass it through a sieve. After cleaning, add the remaining water and sugar to the mixture.
- Add Flavor and Flour:
- Stir in saffron milk for enhanced flavor. Now, add the all-purpose flour to the mixture and mix thoroughly. The consistency will become thick and sticky.
- Incorporate Grape Powder:
- Add grape powder, and observe the smooth texture transitioning into a grainy one.
- Gradually Add Oil:
- Gradually pour in the oil while continuing to mix.
- Set in Pan:
- Pour this mixture into a greased pan and spread it evenly to form a thick layer. Allow it to cool.
- Cut into Pieces:
- Once sufficiently cool, cut it into pieces.
- Garnish and Serve:
- Garnish with almonds, pistachios, and walnuts. It is now ready to be served.
