Baba Patisa Recipe

Ingredients

Chickpea powder (1 cup)

All-purpose flour (1 cup)

Sugar (2 cup)

Oil or ghee (3 cup)

Almonds (1/4 cup)

Pistachio (1/4 cup)

Cashews (1/4 cup)

Glucose syrup (1 tbsp.)

Cardamom powder (1-2 tbsp.)

Recipe

In a pan add oil and put it on medium heat. Once the oil is clear you can add chickpea powder and all-purpose flour. Mix it all together this will turn into a thick paste. Keep stirring till there are no lumps and the mixture is fully blended into thick creamy fluffy paste.

In another pan add water and sugar and let it dissolve. You will get sugar syrup, add glucose syrup to prevent the syrup from crystalizing.  Once you have syrup keep stirring you will see the syrup is getting sticky and thick.

Take another pan and grease it with oil. Now take a huge bowl and fill it with water. Put your greased pan in the water bowl and pour your thick sugar syrup into the greased pan. With the help of a spoon stir the sugar syrup, when it will touch the cold sides of the pan it will become thick, clear soft candy.

Now pour the fluffy chickpea paste into the candy and mix it well. It is the difficult part; you need to stretch the mixture rather than just mixing it together. Now add cardamom powder and keep stretching the mixture. We are aiming for long thin threads, so if you see sugar lumps you need to stretch it.

Dish it out on a pan and let it cool. Once it is at room temperature cut it with the help of a warm knife and sprinkle dry fruit on the top. It is ready to be served.
