Lal-khu Ki Barfi by Rafique Sweets Recipe
Ingredients
Sugar (2 cups)
Fresh full butter milk (1 cup)
Milk powder (1/2 cup)
Cardamom powder (2 tbsp.)
Ricotta cheese (1 cup)
Butter (3-4 tbsp.)
Pistachio (3-4 tbsp.)
Cashew (3-4 tbsp.)
Almonds (3-4 tbsp.)
Recipie
In a pan add butter and put it on low heat, let it melt. Once it is in oil state just add ricotta cheese. Adjust the flame to medium and keep stirring the mixture. Now is the time to add cardamom powder, it will enhance the flavor and add aroma.
Add sugar into the mixture and let is dissolve completely. Adding sugar will make the mixture thick at first but as soon as sugar will start to dissolve the mixture will be thin and watery. Now increase the flame to medium high and keep stirring. It is almost ready all you have to do is make the consistency thick and creamy.
Add dry milk and mix it well, you will notice the mixture is finally a little stable and almost ready. Reduce the flame to medium low. Add pistachios, cashews and almonds according to your taste.
Dish it out and let it cool a little. Once it is at room temperature cut it into pieces and serve it just the way you like it.
Kashmiri Barfi by Qand Fishan Recipe
Ingredients
Full fat Milk (1 cup)
Oil or ghee (1/2 cup)
Full cream (1 cup)
Condensed milk (1 cup)
Sugar (1 cup)
Cardamom powder (3-4 tbsp.)
Almonds (optional)
Pistachios (optional)
Cashews (optional)
Recipe
In a pan heat some oil and put it on low flame, once it is hot enough add cardamom powder. Cardamom powder gives aroma and enhances the taste.
Now add the milk and let it boil. It will take almost ten minutes; once it is boiled add full cream and condensed milk. This will be a little thick so in order to make the consistency smooth keep stirring.
Once the mixture is boiled add sugar to the mixture. The sugar will dissolve and make the consistency a little thin. We are almost ready there is nothing else to do, just keep stirring and increase the flame to medium high.
The consistency will be a little thick with time and you will see that the milk is reduced.
Add some almonds, pistachios and cashews to the mixture and leave rest for garnishing.
Grease the plate with one table spoon of oil and Dish it out on plate. Smooth it down with a spoon into a thick layer. Sprinkle the remaining almonds, pistachios and cashews on top and Let it cool down.
Once the mixture is at room temperature you can cut it down into slices and it is ready to be served.
