Okara Qalaqand Recipe
Fresh full cream milk (1 liter)
Cottage cheese (200 grams)
Sugar (100 grams)
Oil ( 1 table spoon)
Cardamom powder (1 teaspoon)
Pistachio (3-4 tbsp. for garnishing)
Cashew (3-4 tbsp. for garnishing)
Almonds (3-4 tbsp. for garnishing)
Shred the cheese by using a shredder, once it is completely shredded add it to a bowl or dish. Mix it well and kneel it with the help of hand, this will form a dough.
Pour the milk in a pan and put it on low heat, let it boil. Once it is boiled, add sugar and increase the flame to medium high. Keep stirring the milk until it is reduce to half. Keep stirring after every five minutes and add the cheese that you just grated.
The mixture will become grainy and thick. Once the mixture is thick but still a little moist it will be perfect. Now grease a pan by using oil and pour the mixture into the pan. Let it sit for a little time, once it is at room temperature sprinkle the almonds and pistachios if you want.
Cut it into small slices and it is ready to be served.
