Coconut grated or grinded (1 cup)
Oil or ghee (2-3 tbsp.)
Sugar (1/2 cup)
Cardamom powder (1-2 tbsp.)
Food color (optional)
Pistachios crushed (2-3 tbsp. for garnishing)
Almonds crushed (2-3 tbsp. for garnishing)
Cashews crushed (2-3 tbsp. for garnishing)
Grease the pan with oil or butter, add cardamom powder and let it roast for a minutes.
Now, in the oil add cashews, almonds and pistachios. Keep toasting until they are light brown.
In another pan add a little oil and then add sugar and coconut, sugar will caramelize with the help of oil from coconut, sugar will melt and it will act as a binder.
Coconut will be stick together, now add the roasted nuts in the mixture. Also if you want you can add food coloring but it is just optional.
Take a tray or plate, use a parchment paper, and spread it evenly.
Now everything is ready, just spread a thick layer of coconut and sugar mixture and spread it evenly by using a spoon.
Wait for the mixture to be at room temperature, now sprinkle the remaining nuts on top and cut it into small pieces.
Your coconut barfi is ready to be served with regular black tea or green tea.
