Delhi Rabri (lab-e- shereen) Recipe


  • Full cream milk (1 liter)
  • Sugar (1 cup)
  • Corn flour (2 tbsp.)
  • Water (1/2 cup)
  • Jelly (two packets)
  • Water (2 cup)
  • Sugar (4 table spoons)
  • Banana (1/2 cup thinly sliced)
  • Apple (1/2 cup sliced)
  • Fresh cream (1 pack)
  • Grapes (1/4 kg)
  • Mango ( ½ cup)


In a pan pour milk and put it on medium heat and let it boil.

Take a cup and add water and corn flour and mix it well, make sure there are no lumps and it is just like milk. Now the mixture is ready keep it aside.

Once the milk is boiled and you see the bubbles on the surface and cream rising stir it with a spoon and pour in the corn flour paste. After five minutes the milk will become thick, remove it from the heat and let it cool.

Now make the jelly by add water and sugar and once it is a little warm add jelly. Freeze the jelly for at least 15 minutes and then cut it into small cubes.

Now take a big bowl and start making layers, add milk mixture at the bottom, then add fruits layers, then add milk mixture, then jelly. Keep adding layers this will make it more flavorful and rich. Once it is done just place it in fridge for an hour.

It is ready to be served once it is chilled. You can use more fruits or custard instead of corn starch if you like.
