After partition, Haji sahib immigrated with his family from Rewari in India to Hyderabad in Pakistan. He started a shop in Tahir Bazaar (Shahi Bazar), the longest bazaar in Asia where he originally initiated the sweet. No one knew it would be so famous one day that it would become the identity of Hyderabad. After so many years they are still bounded with traditions. They make and sell their products with same passion and love that make them famous for their products.
The shop is a two story building with the ground floor. With just family business started by Haji Bashir Sahib. Now, after 4 generation although the recipe is same but there are more workers than ever who worry about how to meet the rising demand of rabri. They know what they are famous for, and they respect their customers for trusting them. This is the reason they don’t compromise on quality rather they are working hard to keep the quality up to the mark alongside meeting the rising demand. It is served at every celebration especially at wedding receptions, Eid, and other religious celebration. Although there is no session for Rabri but Ramzan and Eid are considered as booming days. They have both plane rabri and pistachio rabri with added natural flavors from pistachio and other nuts.
Ingredients and Recipe of Haji Rabri
The key ingredients include sugar and pure organic milk. Other things like cardamom, saffron cumin are also added with nuts like almonds, cashews, coconut, walnut etc. it is sweet that is prepared by boiling pure milk and later heating it for a long period until it is thick and condensed. Nuts, sugar and other dry fruit are added in order to enhance flavor. It is served both warm and chilled, not only it is a desert but it is also used as an ingredient for other famous desserts.
