What is Amrasa?

Amrasa is a delicious sweet in a circular shape. It has a unique taste with being crispy to soft. It has sesame seeds on the top which add to its flavor and appears tempting. It is delighted by a number of people around the region. It is made not only in Pakistan but also in India and neighboring South Asian countries.

History of Amrasa Batkhela Malakand

The Malakand district is located in Khyber Pakhtunkhwa. In the era of Ashoka, Amrasa were first prepared and then they gained popularity in Batkhela tehsil which is in Malakand. It is a small tehsil with only a few thousand people. The small population even led to the popularity of its special Amrasa. The sweet Amrasa are prepared all around the year and has no restricted of being a seasonal sweet. In Batkhela, it is being sold like hot dogs. The preparation of sweet even in the whole year has not led to diminishing its demand. On the cultural, traditional and family celebration events like Eid, Shab-e-Barat, marriages, and other family friends parties or gatherings. It is not only a demand of locals but people from other cities also come to enjoy it and take it for their relatives as a gift. Ingredients

Amrasa have one of the simplest recipes. The main components are rice, flour, ghee, eggs, sugar, and baking powder. These are added after proper measurements so that the final product has the best taste. In a pan, water and sugar are mixed until the sugar completely dissolves it water. The rice needs to be soaked in water for about 3 to 4 hours. In the next process, they need to be drained off and crushed into small pieces after drying them. The flour is made from the rice and this flour is then mixed with the water and sugar mixture. It is kept aside at room temperature for a few hours. All the other ingredients are added to it after beating them together. It is to be allowed to sit for almost 15-20 minutes. The Amrasa are shaped in a circular shape and a small circular rod is used to make few smaller circular shapes on the top of Amrasa. In a deep pan, oil is added and the Amrasa is shaped and deep fried in the pan. It is fried at a medium to low heat and it is ensured that the Amrasa is cooked from both sides being light brown to medium brown. Sesame seeds are then added on the top to develop taste.
